1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
1 tablespoon neutral oil (like canola or vegetable)
1/4 cup gochujang (Korean chili paste)
3 tablespoons honey
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 tablespoon sesame oil
2 cloves garlic, minced
1 teaspoon fresh ginger, grated
1/4 cup water or chicken broth
1 teaspoon cornstarch (optional, for thickening)
Instructions
If using chicken breasts, pat them dry. Place the chicken pieces in a bowl.
In a separate small bowl, whisk together the gochujang, honey, soy sauce, rice vinegar, sesame oil, minced garlic, and grated ginger. This is your sauce base.
Heat the neutral oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides, about 5 to 7 minutes.
Pour the prepared sauce over the chicken in the skillet. Stir to coat everything evenly.
Add the water or broth to the skillet. Bring the mixture to a simmer.
Reduce the heat to medium-low and let the sauce bubble gently for 5 to 8 minutes, stirring often, until the sauce thickens and coats the chicken with a sticky glaze.
If the sauce is too thin, mix the cornstarch with 1 teaspoon of cold water to create a slurry. Stir the slurry into the simmering sauce and cook for 1 minute until thickened.
Serve immediately over rice or in bowls.
Notes
For crispy chicken, dredge the raw chicken pieces lightly in cornstarch before searing them in Step 3.
To bake this recipe, toss the raw chicken with half the sauce, bake at 400°F (200°C) for 15 minutes, then toss with the remaining sauce and bake for 5 more minutes.
Garnish with sesame seeds and sliced green onions before serving.
