Follow this recipe to make Gordon Ramsay’s rich, fudgy chocolate brownies from scratch.

  • 225g unsalted butter
  • 225g dark chocolate (70% cocoa solids), broken into pieces
  • 3 large eggs
  • 3 large egg yolks
  • 275g caster sugar
  • 115g plain flour
  • 1 teaspoon vanilla extract
  • Pinch of sea salt
  • 50g chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 180°C (160°C fan/Gas Mark 4). Grease and line a 20cm square baking tin with parchment paper, leaving an overhang on two sides for easy removal.
  2. Melt the butter and dark chocolate together gently in a heatproof bowl set over a saucepan of simmering water, ensuring the water does not touch the bottom of the bowl. Stir until smooth, then remove from the heat and let it cool slightly.
  3. In a separate large bowl, whisk the eggs, egg yolks, and caster sugar together until pale and slightly thickened. Whisk in the vanilla extract.
  4. Pour the slightly cooled chocolate mixture into the egg mixture and whisk until just combined. Do not overmix.
  5. Sift the flour and salt over the chocolate mixture. Gently fold the flour in using a spatula until no streaks of flour remain. Fold in the chopped nuts, if using.
  6. Pour the batter into the prepared baking tin and spread evenly.
  7. Bake for 25 to 30 minutes. The edges should look set, but the center should still be slightly soft and fudgy when gently shaken.
  8. Let the brownies cool completely in the tin on a wire rack before lifting them out using the parchment overhang. Cut into squares once fully cooled for the best texture.

Notes

  • For a deeper chocolate flavor, use high-quality chocolate with at least 70% cocoa solids.
  • Do not overbake; the fudgy texture relies on a slightly underdone center when removed from the oven.
  • Chilling the brownies for several hours before cutting helps achieve clean, neat squares.
