  • 2 large grapefruits, segmented and drained
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • Pinch of salt

Instructions

  1. Preheat your oven to 250 degrees F. Line a baking sheet with parchment paper and draw a 9-inch circle on it.
  2. In a clean, dry bowl, beat the egg whites until soft peaks form.
  3. Gradually add the superfine sugar, one tablespoon at a time, beating well after each addition until stiff, glossy peaks form.
  4. Gently fold in the vinegar, cornstarch, and vanilla extract.
  5. Spoon the meringue onto the drawn circle on the parchment paper, building up the sides slightly to form a nest shape.
  6. Place the meringue in the preheated oven and immediately reduce the temperature to 225 degrees F.
  7. Bake for 1 hour and 15 minutes. Turn off the oven, prop the door open slightly, and let the meringue cool completely inside the oven (about 2 hours).
  8. While the meringue cools, whip the heavy cream with the powdered sugar and salt until medium peaks form.
  9. Just before serving, gently spread the whipped cream over the cooled meringue base.
  10. Arrange the grapefruit segments over the cream.
  11. Sprinkle the finely chopped fresh rosemary over the top for a fragrant finish.
