Make fudgy, low-calorie brownies using Greek yogurt instead of butter for a healthier treat that stays under 100 calories per serving.

  • 1/2 cup non-fat plain Greek yogurt
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup granulated sweetener (like erythritol or stevia blend)
  • 1/4 cup all-purpose flour
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • 1/4 cup sugar-free chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
  2. In a medium bowl, whisk together the Greek yogurt, egg, and vanilla extract until smooth.
  3. In a separate bowl, combine the cocoa powder, sweetener, flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  5. Fold in the chocolate chips, if using.
  6. Spread the batter evenly into the prepared pan.
  7. Bake for 18 to 20 minutes. The brownies are done when a toothpick inserted near the center comes out with moist crumbs attached, not wet batter.
  8. Let the brownies cool completely in the pan before cutting into 16 small squares.

Notes

  • Cooling the brownies fully helps them set and achieve a fudgier texture.
  • For best results when measuring flour, spoon it into the measuring cup and level off the top.
  • You can substitute non-fat plain Greek yogurt for regular yogurt to keep the fat content low.
