  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 (13.5 ounce) can full-fat coconut milk
  • 2 to 4 tablespoons green curry paste (adjust to your spice preference)
  • 1 tablespoon fish sauce
  • 1 teaspoon brown sugar
  • 1 cup chicken or vegetable broth
  • 1 red bell pepper, sliced
  • 1 cup fresh snap peas
  • 1/2 cup fresh basil leaves
  • Juice of 1 lime
  • Cooked jasmine rice, for serving

Instructions

  1. Heat the coconut oil in a large skillet or wok over medium heat.
  2. Add the chopped onion and cook until softened, about 3 minutes.
  3. Stir in the minced garlic and grated ginger. Cook for 1 minute until fragrant.
  4. Add the green curry paste to the pan. Stir and cook for 1 minute, allowing the flavors to bloom.
  5. Pour in the coconut milk and broth. Stir well to combine with the curry paste.
  6. Add the fish sauce and brown sugar. Bring the mixture to a gentle simmer.
  7. Add the sliced red bell pepper and snap peas. Cook for 3-4 minutes until the vegetables are tender-crisp.
  8. Add the shrimp to the simmering curry. Cook for 2 to 3 minutes, stirring occasionally, until the shrimp turn pink and opaque. Do not overcook.
  9. Remove the skillet from the heat. Stir in the fresh basil leaves and lime juice.
  10. Taste the curry and adjust seasoning if needed.
  11. Serve immediately over warm jasmine rice.
