4 ears of corn, husked
2 tablespoons olive oil
1/2 cup mayonnaise
1/4 cup crumbled cotija cheese
2 tablespoons chopped fresh cilantro
1 tablespoon lime juice
1/2 teaspoon chili powder
Pinch of cayenne pepper (optional)
Instructions
Preheat your grill to medium-high heat.
Brush the corn with olive oil. Grill for 10-12 minutes, turning occasionally, until tender and lightly charred.
While the corn is grilling, mix together mayonnaise, cotija cheese, cilantro, lime juice, chili powder, and cayenne pepper (if using) in a small bowl.
Once grilled, spread the mayonnaise mixture evenly over each ear of corn.
Serve immediately, with extra cotija cheese and cilantro for garnish if desired.
Notes
For extra char, you can place the corn directly over the hottest part of the grill for a minute or two.
If you don’t have cotija cheese, feta cheese can be substituted.
Adjust the chili powder and cayenne pepper to your spice preference.
