4 (6 ounce) salmon fillets, skin on or off
1/4 cup Dijon mustard
1/4 cup honey
2 tablespoons olive oil
1 tablespoon apple cider vinegar
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Prepare the grill for medium heat, about 375°F (190°C). Lightly oil the grates to prevent sticking.
In a small bowl, whisk together the Dijon mustard, honey, olive oil, apple cider vinegar, garlic powder, salt, and pepper to create the glaze.
Place the salmon fillets in a shallow dish. Brush about half of the honey mustard glaze over the top and sides of the salmon. Let the salmon marinate for 15 minutes. Do not marinate longer than 30 minutes, as the acid in the vinegar can start to break down the fish.
Place the salmon fillets on the oiled grill grates, glaze-side up.
Grill for 5 to 7 minutes per side, depending on thickness. Baste with the remaining glaze during the last 2 minutes of cooking on the first side.
Cook until the internal temperature reaches 145°F (63°C) and the fish flakes easily with a fork.
Remove the salmon from the grill and serve immediately.
Notes
For easy cleanup and to prevent sticking, use a grill mat or place the salmon on cedar planks soaked in water for at least 30 minutes before grilling.
If you prefer a thicker glaze, reduce the mixture slightly in a small saucepan over low heat before brushing it on.
Serve with grilled asparagus or a fresh summer salad for a complete meal.
