Simple recipe for marinated vegetable skewers featuring a mix of colorful vegetables, perfect for grilling.

  • 1 red bell pepper, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1 yellow squash, sliced 1/2 inch thick
  • 1 zucchini, sliced 1/2 inch thick
  • 1 red onion, cut into 1-inch wedges
  • 8 ounces cremini mushrooms, whole
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 wooden or metal skewers

Instructions

  1. Soak wooden skewers in water for at least 30 minutes before use.
  2. In a small bowl, whisk together olive oil, lemon juice, oregano, basil, garlic powder, salt, and pepper to make the marinade.
  3. Place all cut vegetables in a large bowl. Pour the marinade over the vegetables and toss gently to coat evenly. Let the vegetables marinate for 20 minutes.
  4. Preheat your grill to medium heat (about 350°F). Lightly oil the grill grates.
  5. Thread the marinated vegetables onto the skewers, alternating colors and types for a rainbow effect.
  6. Place the skewers on the preheated grill.
  7. Grill for 10 to 12 minutes, turning every 3 to 4 minutes, until the vegetables are tender-crisp and show nice grill marks.
  8. Remove from the grill and serve immediately.

Notes

  • If using metal skewers, you do not need to soak them.
  • For best results, cut vegetables into uniform sizes so they cook evenly.
  • You can substitute any firm vegetables you prefer, such as cherry tomatoes or eggplant.
