1 pound ground beef
1 tablespoon taco seasoning mix
1/2 cup water
8 medium flour tortillas
2 cups shredded Monterey Jack or cheddar cheese
1 tablespoon vegetable oil
Instructions
Brown the ground beef in a skillet over medium heat. Drain any excess fat.
Stir in the taco seasoning mix and water. Bring to a simmer and cook for 5 minutes, stirring occasionally, until the liquid reduces. Remove from heat.
Heat a large, dry skillet or griddle over medium heat.
Place one tortilla in the hot skillet. Sprinkle half of the tortilla with about 1/4 cup of the cooked ground beef mixture and 1/4 cup of cheese.
Fold the empty half of the tortilla over the filling to create a half-moon shape.
Cook for 2 to 3 minutes per side, pressing down gently with a spatula, until the tortilla is golden brown and the cheese is melted.
Remove from the skillet and keep warm while you cook the remaining quesadillas. Add a small amount of oil to the skillet if the tortillas start sticking.
Slice each quesadilla into wedges before serving.
Notes
For crispier tortillas, wipe the skillet clean between batches and use a light coating of oil or butter.
Use a medium heat setting to cook; high heat burns the tortilla before the cheese melts.
