  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (10 ounce) can diced tomatoes with green chilies, undrained
  • 4 cups chicken broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup frozen corn
  • 1/2 cup chopped fresh cilantro (for garnish)
  • 1 cup shredded Monterey Jack cheese (for garnish)
  • Tortilla strips (for garnish)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add chicken pieces and cook until browned on all sides. Remove chicken and set aside.
  3. Add onion to the pot and cook until softened, about 5 minutes.
  4. Stir in garlic, cumin, chili powder, and oregano. Cook for 1 minute until fragrant.
  5. Return chicken to the pot. Add both cans of diced tomatoes and chicken broth.
  6. Bring the soup to a boil, then reduce heat and simmer for 15 minutes, allowing flavors to blend.
  7. Stir in frozen corn and cook for 5 more minutes until heated through.
  8. Season with salt and pepper to your preference.
  9. Ladle soup into bowls. Top each serving with tortilla strips, shredded cheese, and fresh cilantro.

Notes

  • For extra richness, use rotisserie chicken instead of raw chicken breast.
  • You can add a squeeze of fresh lime juice just before serving to brighten the flavor.
  • If you prefer a thicker soup, mash some of the beans or use an immersion blender briefly on a small portion of the soup.
