A rustic tart showcasing vibrant heirloom tomatoes on a flaky pastry crust with cheese and herbs, capturing the taste of summer.

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 3/4 cup cold unsalted butter, cut into cubes
  • 6-8 tablespoons ice water
  • 2 pounds heirloom tomatoes, thinly sliced
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 cup shredded Gruyere cheese
  • 1/4 cup grated Parmesan cheese
  • 1 egg, beaten (for egg wash)
  • Fresh basil leaves, for garnish

Instructions

  1. In a large bowl, whisk together flour and salt. Cut in cold butter with a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  2. Gradually add ice water, 1 tablespoon at a time, mixing until the dough just comes together. Form into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  3. Preheat oven to 400°F (200°C).
  4. On a lightly floured surface, roll out the dough into a 12-inch circle. Transfer to a baking sheet lined with parchment paper.
  5. Arrange the sliced tomatoes in the center of the dough, leaving a 2-inch border.
  6. Drizzle tomatoes with olive oil and sprinkle with thyme, rosemary, pepper, and salt.
  7. Sprinkle Gruyere and Parmesan cheeses over the tomatoes.
  8. Fold the dough border over the edges of the tomatoes, pleating as needed.
  9. Brush the folded dough with the beaten egg wash.
  10. Bake for 30-35 minutes, or until the crust is golden brown and the tomatoes are tender.
  11. Let cool slightly before garnishing with fresh basil leaves.

Notes

  • For an extra flaky crust, ensure your butter and water are very cold.
  • You can add other herbs like oregano or chives to the tomato filling.
  • A mix of cheeses like mozzarella or goat cheese can also be used.
