1.5 lbs pork tenderloin
2 tbsp olive oil
1 tbsp dried rosemary
1 tbsp dried thyme
1 tsp garlic powder
1 tsp onion powder
1/2 tsp salt
1/4 tsp black pepper
2 cups broccoli florets
1 cup chopped carrots
1 cup chopped bell peppers
Instructions
Preheat your oven to 400°F (200°C).
In a small bowl, mix together rosemary, thyme, garlic powder, onion powder, salt, and pepper.
Rub the pork tenderloin with 1 tablespoon of olive oil and then coat it evenly with the herb mixture.
In a large bowl, toss the broccoli, carrots, and bell peppers with the remaining 1 tablespoon of olive oil and a pinch of salt and pepper.
Arrange the seasoned pork tenderloin and the seasoned vegetables in a single layer on a large baking sheet.
Roast for 20-25 minutes, or until the pork reaches an internal temperature of 145°F (63°C) and the vegetables are tender.
Let the pork rest for 5 minutes before slicing.
Serve the sliced pork with the roasted vegetables.
Notes
You can customize the vegetables based on your preference. Other great options include potatoes, Brussels sprouts, or asparagus.
