Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and black pepper to taste
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 4 cloves garlic, minced
  • 1/2 cup low-sodium chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil
  • Red pepper flakes to taste (optional)

Instructions

  1. Pat the chicken breasts dry. Season them with Italian seasoning, garlic powder, onion powder, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Sear the chicken breasts for 3-4 minutes per side until golden brown. Remove chicken from the skillet and set aside.
  4. Add the minced garlic and chopped sun-dried tomatoes to the skillet. Sauté for 1 minute until fragrant.
  5. Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet.
  6. Reduce heat to medium-low. Stir in the heavy cream and Parmesan cheese until the sauce is smooth and slightly thickened.
  7. Return the chicken breasts to the skillet. Spoon the sauce over the chicken.
  8. Simmer for 5-7 minutes, or until the chicken is cooked through and the sauce has thickened to your liking.
  9. Stir in fresh basil and red pepper flakes (if using).
  10. Serve immediately.

Notes

  • For a lower-fat option, you can use half-and-half instead of heavy cream.
  • Ensure the chicken is cooked to an internal temperature of 165°F (74°C).
  • You can serve this dish with pasta, rice, or a fresh green salad.
