  • 1 cup dry cottage cheese
  • 2 large eggs
  • 1/2 cup cocoa powder
  • 1/2 cup sweetener (sugar or sugar substitute)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
  2. Combine the cottage cheese, eggs, cocoa powder, and sweetener in a food processor or high-speed blender.
  3. Process until the mixture is completely smooth and no lumps of cottage cheese remain. Scrape down the sides as needed.
  4. Pour the batter into the prepared baking pan. Spread evenly.
  5. Bake for 20 to 25 minutes. The edges should look set, and a toothpick inserted near the center should come out with moist crumbs, not wet batter.
  6. Let the brownies cool completely in the pan before slicing. Cooling helps them set into a fudgier texture.

Notes

  • For a smoother texture, use small curd cottage cheese.
  • If you prefer a sweeter result, increase the sweetener slightly, but taste the batter first.
  • This recipe is naturally gluten-free if you use a gluten-free sweetener.
