4 tablespoons unsalted butter
2 cloves garlic, minced (optional, for flavor)
1 cup heavy cream
1 cup freshly grated Parmesan cheese, packed
1/4 teaspoon salt (or to taste)
1/8 teaspoon black pepper (or to taste)
Instructions
Melt the butter in a medium saucepan over medium heat. If using garlic, add it now and cook for about 30 seconds until fragrant. Do not let it brown.
Pour in the heavy cream. Bring the mixture to a gentle simmer, stirring occasionally. Watch it closely; you do not want it to boil rapidly.
Reduce the heat to low. Slowly whisk in the grated Parmesan cheese, a little at a time. Continue whisking until the cheese is completely melted and the sauce is smooth.
Remove the pan from the heat immediately once all the cheese is incorporated. Stir in the salt and pepper.
Toss immediately with hot, drained fettuccine pasta or use as desired. The residual heat will thicken the sauce perfectly.
Notes
Always use freshly grated Parmesan cheese for the best melt and texture. Pre-shredded cheese often contains anti-caking agents that cause graininess.
Keep the heat low when adding the cheese to prevent the sauce from separating or becoming grainy.
This sauce thickens considerably as it cools. If reheating, add a splash of milk or extra cream to loosen it up.
