  • 1/4 cup apple cider vinegar
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder (optional)

Instructions

  1. Prepare your canning supplies: sterilize jars, lids, and rings.
  2. Combine tomatoes, onions, bell peppers, jalapeños, and garlic in a large pot.
  3. Stir in apple cider vinegar, salt, pepper, cumin, and chili powder if using.
  4. Bring the mixture to a boil over medium-high heat.
  5. Reduce heat and simmer for 20-30 minutes, stirring occasionally, until the vegetables are tender and the salsa has thickened slightly.
  6. Ladle the hot salsa into the prepared jars, leaving 1/2 inch of headspace.
  7. Wipe jar rims clean and place lids and rings on tightly.
  8. Process the jars in a boiling water bath for 15 minutes (adjust for altitude if necessary).
  9. Carefully remove jars from the water bath and let them cool completely on a towel-lined counter.
  10. Check seals after 12-24 hours. If a lid does not flex when pressed, the salsa is properly sealed. Store unsealed jars in the refrigerator and consume within a week.
