Make easy, crispy chicken nuggets from scratch using ground chicken. This recipe is suitable for baking and appeals to children.

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs (Panko recommended for crispiness)
  • 1/4 cup grated Parmesan cheese
  • 1 large egg, lightly beaten
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooking spray

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly coat with cooking spray.
  2. In a medium bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, egg, garlic powder, onion powder, salt, and pepper. Mix gently until just combined; do not overmix.
  3. Shape the mixture into small, nugget-sized pieces, about 1 inch thick.
  4. Place the shaped nuggets on the prepared baking sheet. Lightly spray the tops of the nuggets with cooking spray to aid browning.
  5. Bake for 15 to 18 minutes, flipping halfway through, until the nuggets are golden brown and cooked through (internal temperature reaches 165°F or 74°C).
  6. Serve immediately with your favorite dipping sauce.

Notes

  • For extra crispiness, you can briefly chill the shaped nuggets for 15 minutes before baking.
  • To make these freezer friendly, arrange uncooked nuggets on a tray, freeze until solid, then transfer to a freezer bag. Bake directly from frozen, adding 5-7 minutes to the cook time.
  • If you prefer using chicken breast instead of ground chicken, cut the breast into 1-inch pieces and dredge them in flour, then egg, then breadcrumbs before baking.
