- 1 pound ground beef
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup water
- 1 (10 ounce) can Rotel diced tomatoes and green chilies, undrained
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1 tablespoon taco seasoning
- 1/4 cup shredded cheddar cheese
- 1/4 cup shredded Monterey Jack cheese
- 1/2 cup nacho cheese sauce
- 1 (12-inch) flour tortilla
- 1 (8-inch) flour tortilla
- 1/4 cup refried beans
- 1/2 cup shredded lettuce
- 1/4 cup diced tomatoes
- 1/4 cup sliced black olives
- Optional: hot sauce
- In a skillet, cook ground beef over medium heat until browned. Drain off grease.
- Stir in chili powder, cumin, garlic powder, onion powder, salt, and pepper. Cook for 1 minute more.
- Add water and Rotel. Bring to a simmer and cook for 5 minutes, stirring occasionally.
- In a small bowl, mix together sour cream, mayonnaise, and taco seasoning.
- Place the 12-inch tortilla on a clean surface. Spread refried beans evenly over the tortilla, leaving a 1-inch border.
- Spoon the meat mixture over the refried beans.
- Top with shredded cheddar and Monterey Jack cheeses.
- Drizzle nacho cheese sauce over the cheeses.
- Spread the sour cream mixture over the cheese.
- Top with shredded lettuce, diced tomatoes, and black olives.
- Place the 8-inch tortilla on top of the fillings.
- Fold the edges of the 12-inch tortilla over the 8-inch tortilla to create a sealed package.
- Heat a lightly greased skillet or griddle over medium heat.
- Place the crunchwrap seam-side down in the skillet. Cook for 3-5 minutes per side, or until golden brown and heated through.
- Slice in half and serve immediately with hot sauce, if desired.
Notes
- For an extra kick, add a pinch of cayenne pepper to the meat mixture.
- You can substitute ground turkey or chicken for the ground beef.
- If you don’t have Rotel, you can use diced tomatoes and green chilies separately.
- Feel free to add your favorite taco toppings like guacamole or pico de gallo.
