  • 1 pound string cheese
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 2 cups panko breadcrumbs
  • Vegetable oil, for frying
  • Marinara sauce, for serving

Instructions

  1. Cut string cheese into 3-inch pieces.
  2. Place cheese sticks on a parchment-lined baking sheet and freeze for at least 1 hour, or until firm.
  3. Set up a dredging station with three shallow dishes: one with flour, one with beaten eggs, and one with panko breadcrumbs.
  4. Working in batches, coat each frozen cheese stick first in flour, then dip in egg, and finally coat thoroughly with panko breadcrumbs, pressing gently to adhere.
  5. Place coated cheese sticks back on the parchment-lined baking sheet and freeze for another 30 minutes to set the coating.
  6. Heat about 2-3 inches of vegetable oil in a deep pot or Dutch oven to 350°F (175°C).
  7. Carefully fry the mozzarella sticks in batches for 1-2 minutes, or until golden brown and crispy. Do not overcrowd the pot.
  8. Remove fried mozzarella sticks with a slotted spoon and place on a wire rack set over a baking sheet to drain excess oil.
  9. Serve immediately with warm marinara sauce for dipping.

Notes

  • Ensure the oil is at the correct temperature for best results. Too cool and the sticks will be greasy; too hot and they will burn before the cheese melts.
  • For extra crispy sticks, you can double-coat them in egg and panko.
  • These can be prepped ahead and frozen until ready to fry.
