  • 6 cups fresh peaches, peeled, pitted, and sliced
  • 1/2 cup granulated sugar, plus more for sprinkling
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cut into cubes
  • 1/2 cup milk
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the sliced peaches, 1/2 cup sugar, 2 tablespoons flour, cinnamon, nutmeg, and lemon juice. Toss gently to coat the peaches evenly.
  3. Pour the peach mixture into a 9×9 inch baking dish.
  4. In a separate bowl, whisk together 1 cup flour, 1/4 cup sugar, baking powder, and salt.
  5. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  6. Gradually add the milk and stir until just combined to form a soft dough. Do not overmix.
  7. Drop spoonfuls of the dough over the peach mixture in the baking dish.
  8. Brush the tops of the dough with the beaten egg and sprinkle with a little extra sugar.
  9. Bake for 35-45 minutes, or until the topping is golden brown and the peach filling is bubbly.
  10. Let the cobbler cool slightly before serving.
