- 100g active sourdough starter
- 350g warm water
- 500g bread flour
- 10g salt
- Combine active sourdough starter and warm water in a large bowl.
- Add bread flour and salt.
- Mix until a shaggy dough forms.
- Knead the dough for 8-10 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover, and let it rise at room temperature for 4-6 hours, or until doubled in size.
- Punch down the dough and divide it into 8 equal pieces.
- Shape each piece into a bagel.
- Place the shaped bagels on a baking sheet lined with parchment paper, cover, and let them rise for another 1-2 hours.
- Preheat your oven to 220°C (425°F).
- Bring a large pot of water to a boil. Add a tablespoon of honey or malt syrup if desired.
- Boil each bagel for 30-60 seconds per side.
- Transfer the boiled bagels back to the baking sheet.
