  • 1.5 lbs carrots, peeled and cut into 1-inch pieces
  • 3 tablespoons unsalted butter, melted
  • 3 tablespoons honey
  • 3 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
  2. In a medium bowl, whisk together the melted butter, honey, minced garlic, salt, and pepper until well combined. This is your glaze.
  3. Add the cut carrots to the bowl. Toss them thoroughly until every piece is evenly coated with the honey garlic butter mixture.
  4. Spread the coated carrots in a single layer on the prepared baking sheet. Do not overcrowd the pan; use two sheets if necessary for better roasting.
