Prepare simple, flavorful chicken skewers using a sweet and savory honey garlic marinade. Cook them on the grill, in the oven, or in an air fryer for a quick weeknight meal or party appetizer.

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/4 cup honey
  • 1/4 cup low sodium soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 4 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water (for slurry)
  • 1 tablespoon vegetable oil
  • Wooden or metal skewers
  • Optional: 1 red bell pepper, cut into 1-inch pieces
  • Optional: 1 medium red onion, cut into 1-inch pieces

Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes.
  2. In a medium bowl, whisk together the honey, soy sauce, rice vinegar, sesame oil, minced garlic, ginger, and red pepper flakes to create the marinade.
  3. Place the cubed chicken into the marinade, ensuring all pieces are coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours. Do not marinate longer than 4 hours due to the soy sauce.
  4. Remove the chicken from the marinade, reserving the remaining liquid. Thread the chicken pieces onto the skewers, alternating with optional vegetables.
  5. Preheat your grill to medium heat (about 375°F) or preheat your oven to 400°F (200°C).
  6. For the sauce: Pour the reserved marinade into a small saucepan. Bring to a simmer over medium heat. Whisk in the cornstarch slurry. Cook, stirring constantly, until the sauce thickens enough to coat the back of a spoon, about 2 minutes. Remove from heat.
  7. To Grill: Lightly oil the grates. Place skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through (internal temperature reaches 165°F). Brush with the thickened sauce during the last 2 minutes of cooking.
  8. To Bake: Arrange skewers on a baking sheet lined with parchment paper. Bake for 15-18 minutes, flipping halfway, until cooked through. Brush with the thickened sauce during the last 5 minutes of baking.
  9. To Air Fry: Place skewers in a single layer in the air fryer basket (work in batches if necessary). Air fry at 380°F (195°C) for 10-12 minutes, flipping halfway. Brush with the thickened sauce during the last 2 minutes.
  10. Serve immediately, drizzling any remaining sauce over the cooked skewers.

Notes

  • For extra juicy results, cut the chicken into uniform 1-inch pieces so they cook evenly.
  • If you prefer a thicker glaze, reduce the honey garlic sauce longer on the stovetop before adding the slurry.
  • These skewers pair well with steamed rice or a simple green salad.
