  • 1.5 lbs carrots, peeled and cut into 1-inch pieces
  • 3 tablespoons unsalted butter, melted
  • 3 tablespoons honey
  • 2 tablespoons brown sugar, packed
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. In a large bowl, toss the cut carrots with the melted butter, honey, brown sugar, minced garlic, salt, and pepper until the carrots are evenly coated.
  3. Spread the coated carrots in a single layer on a rimmed baking sheet. Do not overcrowd the pan; use two sheets if necessary for better caramelization.
  4. Roast for 20 to 25 minutes, stirring halfway through the cooking time.
  5. The carrots are done when they are tender when pierced with a fork and the glaze is bubbly and slightly caramelized.
  6. Serve immediately as a sweet and savory side dish.

Notes

  • For extra shine, you can brush the carrots with a little extra honey during the last five minutes of roasting.
  • If you prefer a stovetop method, melt the butter, honey, and brown sugar in a large skillet over medium heat, add the carrots and garlic, cover, and simmer for 15-20 minutes until tender, uncovering for the last 5 minutes to allow the glaze to thicken.
  • Use baby carrots for a quicker cooking time, reducing the roast time by about 5 minutes.
