4 (6 ounce) cod fillets, about 1 inch thick
1 tablespoon olive oil
Salt and black pepper to taste
1/4 cup honey
3 tablespoons soy sauce (low sodium preferred)
2 cloves garlic, minced
1 teaspoon grated fresh ginger
1 teaspoon rice vinegar
Instructions
Pat the cod fillets dry with paper towels. Season both sides lightly with salt and pepper.
Prepare the glaze: In a small bowl, whisk together the honey, soy sauce, minced garlic, grated ginger, and rice vinegar until combined.
To sear: Heat the olive oil in a large non-stick skillet over medium-high heat until shimmering. Place the cod fillets presentation-side down in the hot skillet. Sear for 3 to 4 minutes until a golden crust forms.
Flip the fillets carefully. Brush half of the prepared glaze over the seared side of the fish. Cook for 2 minutes.
Brush the remaining glaze over the fish. Reduce heat to medium-low and cook for another 2 to 4 minutes, basting occasionally, until the fish is opaque and flakes easily with a fork. The glaze should look sticky.
For the baking alternative: Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Place the seasoned fillets on a parchment-lined baking sheet. Brush all sides with the glaze mixture. Bake for 12 to 15 minutes, or until the fish reaches an internal temperature of 145 degrees Fahrenheit and flakes easily. Brush with any remaining glaze halfway through baking.
Serve the sticky glazed cod immediately.
Notes
For extra stickiness, you can briefly broil the fish for the last minute after searing or baking, watching carefully to prevent burning the honey.
If you prefer a thicker glaze, simmer the sauce mixture in a small saucepan for 2 minutes before brushing it onto the fish.
