Prepare tender, glazed chicken breasts coated in a sweet and tangy honey lime sauce, served with a bright, fresh avocado salsa.

  • 1.5 lbs boneless, skinless chicken breasts
  • 1/4 cup honey
  • 1/4 cup fresh lime juice
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • For the Salsa:
  • 2 ripe avocados, diced
  • 1/2 cup chopped red onion
  • 1/2 cup chopped cilantro
  • 1 jalapeño, seeded and minced (optional)
  • 2 tablespoons extra lime juice
  • 1/4 teaspoon salt

Instructions

  1. Combine honey, lime juice, soy sauce, olive oil, garlic powder, salt, and pepper in a bowl to make the marinade.
  2. Place chicken breasts in a resealable bag or shallow dish. Pour half of the marinade over the chicken, reserving the other half for basting or serving. Marinate for at least 30 minutes or up to 4 hours in the refrigerator.
  3. While the chicken marinates, prepare the salsa. Gently combine the diced avocado, red onion, cilantro, minced jalapeño (if using), extra lime juice, and salt in a medium bowl. Set aside.
  4. Heat a large skillet over medium-high heat. Remove chicken from the marinade, letting excess drip off. Discard the used marinade.
  5. Cook the chicken for 5 to 7 minutes per side, until fully cooked through (internal temperature reaches 165°F or 74°C). Baste with a little of the reserved marinade during the last few minutes of cooking if desired.
  6. Remove the chicken from the skillet and let it rest for 5 minutes before slicing or serving whole.
  7. Serve the Honey Lime Chicken topped generously with the fresh avocado salsa.

Notes

  • You can grill the chicken instead of pan-searing for a smoky flavor. Adjust cooking time as needed.
  • For a thicker glaze, simmer the reserved marinade in a small saucepan until it reduces slightly before serving.
  • If you do not want the salsa to brown quickly, add the lime juice last and mix gently.
