A simple, refreshing salad combining crisp Honeycrisp apples, salty feta cheese, and candied pecans, topped with a tangy maple-balsamic vinaigrette.

  • 6 cups mixed greens (e.g., spring mix or baby spinach)
  • 2 Honeycrisp apples, cored and thinly sliced
  • 4 ounces feta cheese, crumbled
  • 1/2 cup candied pecans
  • 1/4 cup red onion, thinly sliced
  • For the Vinaigrette: 1/4 cup olive oil
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon pure maple syrup
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste

Instructions

  1. Prepare the vinaigrette: In a small bowl, whisk together the olive oil, balsamic vinegar, maple syrup, and Dijon mustard. Season with salt and pepper. Set aside.
  2. To prevent apple browning, toss the apple slices immediately with one teaspoon of the prepared vinaigrette or a splash of lemon juice.
  3. In a large bowl, combine the mixed greens, prepared apple slices, red onion, and candied pecans.
  4. Just before serving, drizzle the vinaigrette over the salad ingredients. Gently toss to coat everything lightly.
  5. Sprinkle the crumbled feta cheese over the top of the salad.
  6. Serve immediately for the best texture.

Notes

  • For added protein, include 4 ounces of grilled chicken breast or 1/2 cup of cooked quinoa.
  • If you do not have candied pecans, use toasted walnuts or slivered almonds instead.
