1 cup (2 sticks) unsalted butter, softened
1 1/2 cups granulated sugar
1 cup packed light brown sugar
2 large eggs
1 teaspoon vanilla extract
3 cups all-purpose flour
1 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup chocolate chips
1 cup mini marshmallows
Instructions
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
Beat in the eggs one at a time, then stir in the vanilla extract.
In a separate medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Stir in the chocolate chips.
For each cookie, scoop about 2 tablespoons of dough into your hand. Flatten it slightly and place 2-3 mini marshmallows in the center.
Carefully wrap the dough around the marshmallows, forming a ball. Ensure the marshmallows are fully enclosed.
Place the cookie dough balls onto the prepared baking sheets, leaving about 2 inches between them.
Bake for 10-12 minutes, or until the edges are set and the centers are still slightly soft.
Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
Notes
For an extra chocolatey flavor, you can use dark cocoa powder.
If you don’t have mini marshmallows, you can cut larger marshmallows into smaller pieces.
