  • 4 medium apples (like Honeycrisp or Gala)
  • 1/4 cup rolled oats
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon chopped pecans or walnuts (optional)
  • 2 tablespoons caramel sauce (optional, for serving)
  • Vanilla ice cream (optional, for serving)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Wash the apples. Cut off the top quarter of each apple and set aside.
  3. Using a spoon or melon baller, carefully scoop out the core and seeds from the bottom of each apple, creating a cavity. Be careful not to go all the way through to the bottom.
  4. In a small bowl, combine the rolled oats, brown sugar, cinnamon, nutmeg, and chopped nuts (if using).
  5. Pour the melted butter over the oat mixture and stir until everything is well combined.
  6. Spoon the oat mixture evenly into the cavities of the hollowed-out apples.
  7. Place the apple tops back onto the filled apples.
  8. Place the prepared apples in a baking dish. You can add about 1/4 inch of water to the bottom of the dish to help keep the apples moist.
  9. Bake for 30-45 minutes, or until the apples are tender when pierced with a fork. Baking time will vary depending on the size and type of apple.
  10. Remove from the oven and let cool slightly.
  11. Serve warm, drizzled with caramel sauce and a scoop of vanilla ice cream if desired.
