A hearty and flavorful Irish beef stew, slow-cooked in rich Guinness stout, perfect for a comforting St. Patrick’s Day meal.

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 (12-ounce) bottle Guinness stout
  • 2 cups beef broth
  • 1 tablespoon tomato paste
  • 2 bay leaves
  • 1 sprig fresh thyme
  • 1 lb baby potatoes, halved
  • 1/4 cup chopped fresh parsley, for garnish

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, toss the beef cubes with flour, salt, and pepper.
  3. Heat olive oil in a large Dutch oven or oven-safe pot over medium-high heat.
  4. Brown the beef in batches on all sides. Remove beef and set aside.
  5. Add onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
  6. Stir in garlic and cook for 1 minute more until fragrant.
  7. Pour in the Guinness and scrape up any browned bits from the bottom of the pot.
  8. Stir in beef broth, tomato paste, bay leaves, and thyme.
  9. Return the beef to the pot. Bring to a simmer.
  10. Cover and transfer to the preheated oven. Cook for 2 hours.
  11. Add the baby potatoes to the stew. Stir to combine.
  12. Cover and continue to cook for another 1 hour, or until the beef and potatoes are tender.
  13. Remove bay leaves and thyme sprig.
  14. Garnish with fresh parsley before serving.

Notes

  • For a thicker stew, you can let it simmer uncovered for the last 30 minutes of cooking.
  • This stew tastes even better the next day!
