Instructions
Preheat your oven to 375°F (190°C). Lightly grease a 9-inch deep-dish pie plate or baking dish.
In a large bowl, combine the sliced apples, 1/2 cup granulated sugar, brown sugar, 1 tablespoon flour, cinnamon, and nutmeg. Toss gently to coat the apples evenly. Stir in the lemon juice.
Pour the apple mixture into the prepared baking dish. Dot the top of the apples with the 1/4 cup of cold butter pieces.
Prepare the topping: In a separate medium bowl, whisk together 1 1/2 cups flour, 1 tablespoon sugar, baking powder, and salt.
Cut in the 1/2 cup cold butter cubes using a pastry blender or your fingertips until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.
Pour in the cold heavy cream and mix just until a shaggy dough forms. Do not overmix.
Drop spoonfuls of the dough randomly over the apple filling, leaving some gaps so the filling bubbles through. This creates the classic cobbler look.
Brush the tops of the dough pieces lightly with the beaten egg wash and sprinkle with coarse sugar.
Bake for 45 to 55 minutes, or until the topping is golden brown and the apple filling is bubbly and tender when pierced with a fork.
Let the cobbler cool on a wire rack for at least 20 minutes before serving.
Notes
For the best buttery flavor and flakiest topping, keep all topping ingredients, especially the butter and cream, very cold before mixing.
If the topping begins to brown too quickly, loosely cover the dish with aluminum foil for the last 15 minutes of baking.
