Make a spicy and creamy grilled cheese sandwich inspired by jalapeño poppers. This recipe yields a crispy exterior and a fully melted, flavorful interior.

  • 2 slices sourdough bread
  • 2 tablespoons unsalted butter, softened
  • 2 ounces cream cheese, softened
  • 1/4 cup shredded Monterey Jack cheese
  • 1/4 cup shredded sharp cheddar cheese
  • 2 tablespoons pickled jalapeño slices, drained and finely chopped (remove seeds for less heat)
  • 1 teaspoon garlic powder
  • Pinch of salt

Instructions

  1. In a small bowl, combine the softened cream cheese, Monterey Jack cheese, cheddar cheese, chopped jalapeños, garlic powder, and salt. Mix until fully incorporated.
  2. Spread the cheese mixture evenly onto one side of each slice of bread.
  3. Place the two slices together so the cheese mixture faces inward, forming the sandwich.
  4. Spread the softened butter evenly on the outside surfaces of the sandwich (the sides that will touch the pan).
  5. Heat a non-stick skillet or griddle over medium-low heat.
  6. Place the sandwich in the hot skillet. Cook for 3 to 5 minutes per side, pressing down gently with a spatula occasionally, until the bread is golden brown and the cheese is completely melted.
  7. Remove from the skillet, slice in half, and serve immediately.

Notes

  • For extra crispiness, cook the sandwich slowly over lower heat to allow the cheese time to melt fully before the bread burns.
  • If you prefer fresh jalapeños, blanch them in boiling water for 2 minutes before chopping to reduce the raw heat.
  • Serve with a side of ranch dressing or a drizzle of honey for dipping.
