Make the famous light and airy popovers from Jordan Pond House in Maine. This recipe yields tall, crisp popovers perfect for serving with butter and preserves.

  • 1 cup all-purpose flour
  • 1 cup milk
  • 2 large eggs
  • 1/2 teaspoon salt
  • 2 tablespoons unsalted butter, melted, plus extra for greasing

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit. Place a 6-cup popover pan or a standard muffin tin in the oven while it preheats.
  2. In a medium bowl, whisk together the flour and salt.
  3. In a separate bowl, lightly beat the eggs. Whisk in the milk and the 2 tablespoons of melted butter.
  4. Gradually add the wet ingredients to the dry ingredients, whisking until just combined. Do not overmix; a few small lumps are acceptable.
  5. Carefully remove the hot pan from the oven. Brush the cups generously with softened butter or melted butter.
  6. Pour the batter evenly into the hot cups, filling each about two-thirds full.
  7. Bake at 425 degrees Fahrenheit for 20 minutes. Do not open the oven door during this time.
  8. Reduce the oven temperature to 350 degrees Fahrenheit and bake for an additional 10 to 15 minutes, or until the popovers are deeply golden brown and firm.
  9. Remove the popovers from the oven. Immediately pierce the side of each popover with a small knife to allow steam to escape. This helps prevent them from collapsing.
  10. Serve immediately.

Notes

  • Use room temperature milk and eggs for the best rise.
  • The pan must be very hot when you pour in the batter.
  • For serving, traditional accompaniments are sweet cream butter and strawberry preserves.
