Make this incredibly creamy and tangy Key Lime Cheesecake. This recipe gives you that signature zesty flavor and velvety texture you crave. It is much simpler than you think and results in a show-stopping dessert. We even include a popular no-bake option.

Ingredients

  • Graham Cracker Crust: 1 1/2 cups graham cracker crumbs, 1/4 cup granulated sugar, 6 tablespoons unsalted butter, melted
  • Cheesecake Filling: 2 (8 ounce) packages cream cheese, softened, 1 (14 ounce) can sweetened condensed milk, 1/2 cup fresh lime juice (about 4-5 limes), 1 tablespoon lime zest, 1 teaspoon vanilla extract
  • Optional Topping: Whipped cream, extra lime zest

Instructions

  1. Prepare the crust: Combine graham cracker crumbs, sugar, and melted butter in a bowl. Press firmly into the bottom of a 9-inch springform pan. Chill while you prepare the filling.
  2. Make the filling: In a large bowl, beat the softened cream cheese until completely smooth. Scrape down the sides of the bowl.
  3. Gradually beat in the sweetened condensed milk until fully combined and smooth.
  4. Stir in the fresh lime juice, lime zest, and vanilla extract. Mix until just combined. Do not overmix.
  5. Pour the filling over the chilled crust. Smooth the top with a spatula.
  6. For Baked Version: Bake at 325°F (160°C) for 35-40 minutes, or until the edges are set but the center has a slight wobble.
  7. For No-Bake Version: Chill for at least 6 hours, or preferably overnight, until firm.
  8. Before serving, release the springform pan sides. Top with whipped cream and extra lime zest if desired.

Notes

  • Use fresh lime juice; bottled juice changes the flavor profile significantly.
  • For the best texture, make sure your cream cheese is truly at room temperature.
  • If you bake, allow the cheesecake to cool completely on the counter before refrigerating to prevent cracks.
  • This recipe works well for mini cheesecakes baked in a muffin tin lined with paper liners.
