Ingredients

  • Ramen Noodles: 2 servings
  • Firm or Extra-Firm Tofu: 7 oz block, pressed and cubed
  • Soy Sauce or Tamari: 2 tablespoons
  • Toasted Sesame Oil: 1 tablespoon
  • Gochujang (Korean Chili Paste): 1 teaspoon
  • Garlic: 2 cloves, minced
  • Ginger: 1 teaspoon, grated
  • Vegetable Broth: 4 cups
  • Miso Paste: 1 tablespoon
  • Rice Vinegar: 1 teaspoon
  • Korean BBQ Sauce (for tofu glaze): 2 tablespoons
  • Green Onions: 2, sliced, for garnish
  • Sesame Seeds: 1 teaspoon, toasted, for garnish
  • Optional Veggies (e.g., spinach, mushrooms): 1 cup

Instructions

  1. In a bowl, toss the cubed tofu with soy sauce, sesame oil, gochujang, minced garlic, and grated ginger. Let it marinate for at least 10 minutes.
  2. Heat a non-stick pan over medium-high heat. Add the marinated tofu and cook until golden brown and slightly crispy on all sides, about 6-8 minutes.
  3. In the last minute of cooking the tofu, brush the Korean BBQ sauce over the pieces and cook until the sauce thickens slightly and coats the tofu. Set aside.
  4. In a medium pot, bring the vegetable broth to a simmer. Whisk in the miso paste until fully dissolved. Stir in the rice vinegar. Taste and adjust seasoning if needed.
  5. Cook the ramen noodles according to package directions. Drain them well.
  6. Divide the cooked noodles between two serving bowls.
  7. Ladle the hot miso broth over the noodles.
  8. Arrange the Korean BBQ tofu cubes on top of the noodles and broth. Add any optional vegetables now, allowing the hot broth to wilt them slightly.
  9. Garnish generously with sliced green onions and toasted sesame seeds. Serve immediately.

  • Pressing the tofu removes excess water, allowing it to absorb the marinade better and crisp up nicely.
  • If you prefer a spicier broth, add a dash of gochugaru (Korean chili flakes) to the simmering broth.
