1 lb Italian sausage
1 lb ground beef
1 large onion, chopped
2 cloves garlic, minced
1 (28 ounce) can crushed tomatoes
2 (15 ounce) cans tomato sauce
4 cups beef broth
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
8 ounces lasagna noodles, broken
1 cup ricotta cheese
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
Instructions
In a large pot or Dutch oven, cook Italian sausage and ground beef over medium heat until browned. Drain off excess grease.
Add chopped onion and minced garlic to the pot. Cook until onion is softened, about 5 minutes.
Stir in crushed tomatoes, tomato sauce, and beef broth.
Add dried basil, oregano, salt, and pepper. Bring the soup to a simmer.
Add the broken lasagna noodles to the simmering soup. Cook according to package directions, or until noodles are tender.
In a small bowl, combine ricotta cheese, mozzarella cheese, and Parmesan cheese.
Ladle the soup into bowls. Top each serving with a dollop of the cheese mixture.
Notes
For a vegetarian option, omit the meat and use vegetable broth.
Add a pinch of red pepper flakes for a touch of heat.
Garnish with fresh parsley or basil before serving.
