Brighten your spring days with this Lavender Berry Lemonade. It is a refreshing, floral, and tangy mocktail perfect for warm weather gatherings. You will love the balance of sweet berries, tart lemon, and subtle lavender.

Ingredients

Scale
  • 1 cup fresh or frozen mixed berries (strawberries, blueberries, raspberries)
  • 1/2 cup granulated sugar
  • 1 cup water (for simple syrup)
  • 1 tablespoon dried culinary lavender buds
  • 1 cup fresh lemon juice (about 4-5 lemons)
  • 4 cups cold water or club soda
  • Ice cubes
  • Lemon slices and fresh lavender sprigs for garnish

Instructions

  1. Make the lavender simple syrup: Combine sugar and 1 cup of water in a small saucepan. Heat over medium heat, stirring until the sugar dissolves completely.
  2. Remove the syrup from the heat. Stir in the dried lavender buds. Let the syrup steep for 20 minutes.
  3. Strain the syrup through a fine-mesh sieve, discarding the lavender buds. Set the lavender syrup aside to cool completely.
  4. Muddle the mixed berries in a large pitcher. Press them gently to release their juices.
  5. Pour the cooled lavender simple syrup and fresh lemon juice into the pitcher with the muddled berries. Stir well to combine.
  6. Add 4 cups of cold water or club soda to the pitcher. Stir everything together.
  7. Taste the lemonade. Adjust sweetness or tartness by adding more syrup or lemon juice if needed.
  8. Fill glasses with ice. Pour the Lavender Berry Lemonade over the ice.
  9. Garnish each glass with a lemon slice and a fresh lavender sprig before serving immediately.

Notes

  • For an extra layer of flavor, lightly crush the lavender buds before steeping them in the syrup.
  • If using frozen berries, you can muddle them while slightly thawed.
  • Adjust the amount of lavender syrup based on how sweet you prefer your lemonade.
  • Using club soda instead of still water adds a pleasant fizz.
