- 6 cups turkey broth
- 2 cups cooked, shredded turkey
- 1 cup cooked white rice
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 onion, chopped
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- Salt and black pepper to taste
- Heat the olive oil in a large pot or Dutch oven over medium heat.
- Add the chopped carrots, celery, and onion to the pot. Cook until the vegetables soften, about 5 to 7 minutes.
- Pour in the turkey broth. Bring the mixture to a simmer.
- Stir in the shredded turkey, cooked rice, thyme, and rosemary.
- Continue to simmer for 10 minutes, allowing the flavors to combine.
- Season with salt and pepper to your preference.
- Serve hot.
Notes
- If you do not have leftover rice, add 1/2 cup uncooked white rice with the broth and cook until tender, adding about 15 minutes to the cook time.
- For a richer flavor, substitute 2 cups of the turkey broth with homemade turkey carcass broth.
- You can substitute noodles or small pasta shapes for the rice if desired.
