For the Crust: 1 cup all-purpose flour 1/4 cup granulated sugar 1/2 cup unsalted butter, softened 1/4 teaspoon salt
For the Cheesecake Filling: 8 ounces cream cheese, softened 1/2 cup granulated sugar 1 large egg 1 tablespoon lemon zest 2 tablespoons fresh lemon juice
For the Topping: 1 cup fresh blueberries 1 tablespoon granulated sugar 1 teaspoon cornstarch
Instructions
Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides.
Make the crust: In a medium bowl, whisk together flour, sugar, and salt. Cut in the softened butter until the mixture resembles coarse crumbs. Press the mixture evenly into the bottom of the prepared baking pan.
Bake the crust for 15 minutes. Remove from oven and let it cool slightly while you prepare the filling.
Make the cheesecake filling: In a separate bowl, beat the softened cream cheese and sugar until smooth. Beat in the egg, lemon zest, and lemon juice until just combined.
Pour the cheesecake filling evenly over the baked crust.
Prepare the topping: In a small bowl, gently toss the blueberries with sugar and cornstarch. Scatter the blueberry mixture over the cheesecake filling.
Bake for 25-30 minutes, or until the cheesecake is set and the blueberries are slightly softened.
Let the bars cool completely in the pan on a wire rack. Once cooled, lift the parchment paper to remove the bars.
Cut into squares and serve.
Notes
For a stronger lemon flavor, you can add a drop of lemon extract to the filling.
If you don’t have fresh blueberries, frozen blueberries can be used, but they may release more liquid.
Ensure your cream cheese and egg are at room temperature for a smoother filling.
