Make this simple and flavorful cod dish in under 20 minutes using lemon, garlic, and butter for a quick weeknight meal.

  • 2 (6 ounce) cod fillets
  • 1 tablespoon olive oil
  • 3 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1/4 cup fresh lemon juice
  • 1 tablespoon fresh parsley, chopped
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a small baking dish.
  2. Pat the cod fillets dry with paper towels. Place them in the prepared baking dish. Season both sides with salt and pepper.
  3. In a small saucepan over medium heat, melt the butter. Add the minced garlic and cook for about 1 minute until fragrant. Do not let the garlic brown.
  4. Remove the pan from the heat. Stir in the lemon juice.
  5. Spoon the lemon garlic butter mixture evenly over the cod fillets.
  6. Bake for 12 to 15 minutes, or until the cod flakes easily with a fork and reaches an internal temperature of 145°F (63°C). Cooking time depends on the thickness of the fillets.
  7. Remove from the oven, sprinkle with fresh parsley, and serve immediately.

Notes

  • For extra flavor, you can add a pinch of red pepper flakes to the butter mixture.
  • If your cod fillets are very thick (over 1 inch), you may need to add 2 to 3 minutes to the cooking time.
  • Use fresh lemon juice for the best bright flavor.
