Prepare this quick and flavorful Lemon Garlic Shrimp skillet meal in under 20 minutes. This recipe uses simple ingredients to create a bright, buttery sauce perfect for a weeknight dinner.

Ingredients

Scale
  • 1 pound large shrimp, peeled and deveined
  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 5 cloves garlic, minced
  • 1/4 cup fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup fresh parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. Pat the shrimp dry with paper towels and season lightly with salt and pepper.
  2. Heat the olive oil and butter in a large skillet over medium heat until the butter melts.
  3. Add the minced garlic and red pepper flakes (if using) to the skillet. Cook for about 30 seconds until fragrant, being careful not to burn the garlic.
  4. Add the seasoned shrimp to the skillet in a single layer. Cook for 1 to 2 minutes per side until pink and opaque. Do not overcook.
  5. Reduce the heat to low. Pour in the fresh lemon juice and stir in the lemon zest. Toss the shrimp to coat them evenly in the sauce.
  6. Remove the skillet from the heat. Stir in the chopped fresh parsley.
  7. Taste the sauce and add more salt or pepper if needed. Serve immediately over pasta, rice, or with crusty bread.

Notes

  • For serving, toss this shrimp with 8 ounces of cooked linguine for a quick scampi-style meal.
  • If you prefer a richer sauce, substitute 1 tablespoon of the lemon juice with 1 tablespoon of dry white wine.
  • Use fresh lemon juice for the best bright flavor.
