  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 1/2 cups grated zucchini, squeezed dry
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons fresh lemon juice (for glaze)

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 9×13 inch baking pan.
  2. In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon. Set aside.
  3. In a large bowl, cream the granulated sugar and softened butter until light and fluffy.
  4. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, lemon juice, and lemon zest.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Fold in the squeezed, grated zucchini until evenly distributed throughout the batter.
  7. Spread the batter evenly into the prepared baking pan.
  8. Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the bars cool completely in the pan on a wire rack.
  10. While the bars cool, prepare the glaze: Whisk together the powdered sugar and 2 tablespoons of lemon juice until smooth. Add more lemon juice, a few drops at a time, if the glaze is too thick.
  11. Pour or drizzle the glaze evenly over the cooled bars. Let the glaze set before cutting into squares.

Notes

  • Squeeze excess moisture from the grated zucchini using a clean kitchen towel or paper towels before adding it to the batter. This prevents soggy bars.
  • You can make the bars one day ahead; store them covered at room temperature. Apply the glaze just before serving for the best texture.
