2 cups mascarpone cheese
3/4 cup granulated sugar
4 large eggs, separated
1 cup strong brewed coffee, cooled
1/2 cup limoncello
24 ladyfingers
Unsweetened cocoa powder, for dusting
Instructions
In a bowl, beat the mascarpone cheese and sugar until smooth.
In a separate bowl, whisk the egg yolks into the mascarpone mixture until well combined.
In another clean bowl, beat the egg whites until stiff peaks form.
Gently fold the beaten egg whites into the mascarpone mixture until just combined.
In a shallow dish, combine the cooled coffee and limoncello.
Quickly dip each ladyfinger into the coffee-limoncello mixture, ensuring they are moistened but not soggy.
Arrange a layer of dipped ladyfingers in the bottom of a serving dish.
Spread half of the mascarpone mixture over the ladyfingers.
Repeat with another layer of dipped ladyfingers and the remaining mascarpone mixture.
Cover the dish and refrigerate for at least 4 hours, or preferably overnight.
Before serving, dust the top generously with unsweetened cocoa powder.
Notes
For a firmer texture, you can add an extra egg yolk to the mascarpone mixture.
Ensure your eggs are very fresh as they are used raw.
Adjust the amount of limoncello to your preference for a stronger or milder citrus flavor.
