These Loaded Avocado Deviled Eggs are a fantastic party appetizer. They bring together the creamy richness of avocado with the classic deviled egg, offering a fresh, bright snack that everyone will love.

Ingredients

  • 12 large eggs
  • 2 ripe avocados
  • 1/4 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh cilantro
  • Paprika, for garnish

Instructions

  1. Place eggs in a saucepan and cover with cold water. Bring water to a boil, then remove from heat, cover, and let sit for 10 minutes.
  2. Transfer eggs to an ice bath to cool completely. Peel the eggs and slice them in half lengthwise.
  3. Carefully scoop the yolks into a bowl.
  4. Mash the avocado until completely smooth.
  5. Add the mashed avocado, mayonnaise, lime juice, Dijon mustard, salt, and pepper to the yolks. Mix until well combined and creamy.
  6. Stir in the chopped cilantro.
  7. Spoon or pipe the avocado-yolk mixture back into the egg white halves.
  8. Garnish each egg half with a sprinkle of paprika.
  9. Refrigerate for at least 30 minutes before serving.

Notes

  • For a smoother filling, you can use an electric mixer.
  • If you don’t have lime juice, use lemon juice instead.
  • Make sure your avocados are perfectly ripe for the best texture.
