1.5 pounds Yukon Gold potatoes, cut into 1-inch cubes
0.5 cup mayonnaise
0.25 cup sour cream
2 tablespoons chopped fresh chives
1 tablespoon dried dill weed
1 teaspoon ranch seasoning mix
0.5 teaspoon salt
0.25 teaspoon black pepper
6 slices bacon, cooked and crumbled
0.5 cup shredded cheddar cheese
Instructions
Place potatoes in a large pot and cover with cold water. Bring to a boil and cook for 15-20 minutes, or until fork-tender. Drain well.
In a large bowl, whisk together mayonnaise, sour cream, chives, dill weed, ranch seasoning mix, salt, and pepper until smooth.
Add the drained potatoes to the bowl with the dressing. Gently stir to coat all the potatoes.
Fold in the crumbled bacon and shredded cheddar cheese.
Chill for at least 30 minutes before serving to allow the flavors to meld.
Notes
For best results, use freshly cooked bacon.
You can add other vegetables like chopped celery or red onion for extra crunch.
