Ingredients

  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 1 cup shredded cheddar cheese
  • 1/2 cup crumbled cooked bacon
  • 2 tablespoons chopped fresh scallions

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and scrub the potatoes thoroughly. Prick each potato several times with a fork.
  3. Bake the potatoes directly on the oven rack for 50-60 minutes, or until they are tender when pierced with a fork.
  4. Let the potatoes cool slightly until they are comfortable to handle.
  5. Cut each potato in half lengthwise. Scoop out the flesh, leaving about a 1/4-inch shell. Reserve the scooped-out potato flesh for another use.
  6. Brush the inside and outside of the potato shells with olive oil.
  7. Season the shells with salt and pepper.
  8. Place the potato shells cut-side up on a baking sheet.
  9. Bake for another 10-15 minutes, or until the shells are golden brown and crispy.
  10. Remove the shells from the oven. Fill each shell generously with shredded cheddar cheese and crumbled bacon.
  11. Return the potato skins to the oven for 3-5 minutes, or until the cheese is melted and bubbly.
  12. Garnish with chopped fresh scallions before serving.

Notes

  • For extra crispy skins, you can scoop out a bit more of the potato flesh.
  • Feel free to add other toppings like sour cream, chives, or a different type of cheese.
  • Ensure the bacon is cooked until crispy before crumbling.
