A hearty, smoky cheese dip loaded with seasoned ground beef, chorizo, and peppers, perfect for game days or gatherings.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef (80/20 recommended)
  • 1/2 pound bulk chorizo sausage
  • 1 medium yellow onion, chopped
  • 1 jalapeño pepper, seeded and minced
  • 2 cloves garlic, minced
  • 1 (10 ounce) can Ro-Tel diced tomatoes and green chilies, undrained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (10.75 ounce) can condensed cheddar cheese soup
  • 1/2 cup milk (whole or 2%)
  • 8 ounces Velveeta cheese, cubed
  • 4 ounces Monterey Jack cheese, shredded
  • Optional toppings: chopped cilantro, sliced green onions, sour cream

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add ground beef and chorizo. Cook, breaking up the meat, until browned. Drain off excess grease.
  2. Add onion, jalapeño, and garlic to the skillet. Cook until onions are soft, about 5 minutes.
  3. Stir in chili powder, cumin, smoked paprika, salt, and pepper. Cook for 1 minute until fragrant.
  4. Transfer the meat mixture to a slow cooker or a heavy-bottomed saucepan.
  5. Add Ro-Tel, black beans, condensed cheddar cheese soup, and milk to the slow cooker or saucepan. Stir to combine.
  6. If using a slow cooker, set to LOW. If using a saucepan, set heat to low.
  7. Add the cubed Velveeta and shredded Monterey Jack cheese. Stir frequently until all cheese is completely melted and the dip is smooth. Do not let it boil.
  8. Keep warm on the LOW setting in the slow cooker or on the lowest heat setting on the stovetop.
  9. Serve hot with tortilla chips, Fritos, or vegetable sticks. Top with cilantro and green onions if desired.

Notes

  • To keep the queso warm for serving, use the LOW setting on a slow cooker. Stir every 15 minutes to prevent a skin from forming.
  • For a thicker dip, reduce the amount of milk slightly or add an extra ounce of Monterey Jack cheese.
  • Adjust the amount of jalapeño or add a pinch of cayenne pepper for extra heat.
