- 2 medium sweet potatoes
- 1 tablespoon olive oil
- Salt to taste

- 1/2 cup cooked shredded chicken or turkey
- 1/4 cup black beans, rinsed and drained
- 1/4 cup corn kernels
- 2 tablespoons salsa
- 2 tablespoons shredded cheddar cheese
- 1 tablespoon chopped fresh cilantro (optional)
- Preheat your oven to 400°F (200°C).
- Wash the sweet potatoes and prick them all over with a fork.
- Bake the sweet potatoes for 45-60 minutes, or until tender when pierced with a fork.
- Let the sweet potatoes cool slightly, then slice them in half lengthwise.
- Scoop out most of the flesh, leaving about a 1/4-inch border to create a “skin” boat.

- Spoon the mixture back into the sweet potato skins.
