  • 1 cup Paneer, cubed
  • 2 tablespoons Butter
  • 1/4 cup Onion, finely chopped
  • 1 teaspoon Ginger-Garlic Paste
  • 1/2 teaspoon Turmeric Powder
  • 1 teaspoon Coriander Powder
  • 1/2 teaspoon Cumin Powder
  • 1/4 teaspoon Red Chili Powder (adjust to taste)
  • 1/2 cup Tomato Puree
  • 1/4 cup Heavy Cream
  • 1 teaspoon Kasuri Methi (dried fenugreek leaves)
  • Salt to taste
  • 4 slices Sandwich Bread
  • Butter for grilling
  • Optional: Sliced onions and bell peppers for filling

Instructions

  1. Melt 2 tablespoons of butter in a pan over medium heat.
  2. Add the chopped onion and sauté until soft and translucent.
  3. Stir in the ginger-garlic paste and cook for one minute until fragrant.
  4. Add the turmeric powder, coriander powder, cumin powder, and red chili powder. Toast the spices for 30 seconds.
  5. Pour in the tomato puree and cook until the mixture thickens slightly and the oil begins to separate.
  6. Gently fold in the paneer cubes. Add salt to taste.
  7. Stir in the heavy cream and kasuri methi. Simmer for 2 minutes, then remove from heat. The paneer should be coated in a rich sauce.
  8. Spread a thin layer of butter on one side of each slice of bread.
  9. Place two slices, butter-side down, on a clean surface. Spoon a generous amount of the butter paneer mixture onto one slice. If using, layer with optional vegetables.
  10. Top with the second slice of bread, butter-side up.
  11. Grill the sandwich in a pan or on a griddle over medium heat. Press down gently with a spatula.
  12. Cook for 3-4 minutes per side, or until the bread is golden brown and crispy and the filling is heated through.
  13. Slice in half and serve immediately.
