- 8 large flour tortillas
- 1 tablespoon olive oil
- 1 pound breakfast sausage
- 1 medium onion, chopped
- 1 green bell pepper, chopped
- 1 cup shredded cheddar cheese
- 8 large eggs
- 1/4 cup milk
- Salt and pepper to taste
- Optional: Salsa, sour cream for serving
- Cook breakfast sausage in a large skillet over medium heat until browned. Drain excess grease.
- Add chopped onion and bell pepper to the skillet with the sausage. Cook until vegetables are softened, about 5-7 minutes.
- In a separate bowl, whisk together eggs, milk, salt, and pepper.
- Pour the egg mixture into the skillet with the sausage and vegetables. Cook, stirring occasionally, until the eggs are set.
- Stir in the shredded cheddar cheese until melted.
- Warm the tortillas slightly to make them pliable.
- Spoon the egg mixture onto the center of each tortilla.
- Fold in the sides of the tortilla and then roll it up tightly to form a burrito.
- Wrap each burrito individually in foil or parchment paper.
- Once cooled, store the burritos in an airtight container or freezer bag in the refrigerator or freezer.
- To reheat, unwrap and warm in a skillet, oven, or microwave.

- For freezing, wrap burritos tightly in plastic wrap before wrapping in foil to prevent freezer burn.
- Add your favorite hot sauce for an extra kick.
